Cơm diêm mạch chocolate bữa sáng là món ngon bổ dưỡng, lành mạnh cho những người ăn kiêng, giảm cân, ăn chay, tiểu đường... với việc sử dụng hạt diêm mạch (quinoa) thay cho "cơm". Đây cũng chính là một lý do giải thích cho hạt diêm mạch rất được phương Tây ưa chuộng. Bạn chỉ nấu chín diêm mạch, để nguội rồi trộn với rau xanh, củ quả luộc, trái cây… là chúng ta đã có món cơm diêm mạch giàu dinh dưỡng và dễ làm.
Ngâm và vo thật kĩ hạt diêm mạch (Quinoa) rồi để ráo nước giống như vo gạo vậy. Đun nóng nồi với lửa vừa. Khi nồi nóng, bạn cho hạt diêm mạch vào rang khoảng 3-4 phút. Cho sữa hạnh nhân không đường và muối vào, khuấy đềi. Đun nóng với lửa nhỏ rồi vặn lửa vừa để đun sôi, khi cơm sôi, giảm nhiệt xuống và đậy nắp, đun liu riu trong 12-15 phút.
Khi nước đã cạn hết và hạt diêm mạch đã nở đều, bạn nhấc nồi ra và cho bột cacao, siro đường, tinh chất vani vào trộn đều. Chuẩn bị các loại trái cây bổ dưỡng như chuối, mâm xôi, dâu tây, việt quất, nam việt quất..., các loại hạt tùy thích và cắt nhỏ để ăn kèm "cơm" diêm mạch.
