Dạ dày heo làm sạch bằng cách rửa với muối, rượu trắng. Bạn lộn ngược dạ dày ra, rửa và dùng dao cạo sạch bên trong. Sau đó lộn ngược lại, tiếp tục cạo và rửa sạch cho cả bên trong và bên ngoài nhé. Rửa nhiều lần để không còn tanh nha.

Sau đó, cho dạ dày vào tô lớn, cho dưa leo đã xắt sợi vào cùng 2 muỗng tỏi băm. Nêm vào 2 muỗng nước tương, 1/4 muỗng dầu ớt, 1 muỗng dầu mè, 1 muỗn đường và trộn thật đều lên. Đặt tô dạ dày trộn vào tủ lạnh 30 phút để thấm gia vị là có thể lấy ra ăn nha.
